I love individual serving sized desserts. These vanilla cream pie cups are super simple to make and come with a no-bake Oreo crumb crust that you can make in less than a minute. It only takes some butter, a package of Oreo cookies and your food processor – that’s it!
Making the filling is a quick and easy process as well. I love how the taste of vanilla cream filling interacts with the Oreo cookie crust. The added whip cream on top brings it all together. Not to mention, these things look amazing! They are a great touch for those of you who like to host dinner parties and want to add a little pizzazz to the dessert course… just make the pie cups in advance.

Vanilla Cream Pie Cups with Oreo Crumb Crust

Vanilla Cream Pie Cups made with fresh vanilla bean cream filling and an Oreo crumb crust.

Ingredients
- CRUST:
- 12 Oreo Cookies (whole)
- 2 Tablespoons Butter (divided)
- FILLING:
- ¾ Cup Sugar
- ⅓ Cup Flour
- Pinch of Salt
- ½ Vanilla Bean (seeds scraped and stem discarded) (optional ingredient)
- 3 Cups Whole Milk
- 3 Egg Yolks
- 2 Tablespoons Unsalted Butter
- 1 Teaspoon Vanilla Extract
- WHIPPED CREAM:
- 1 Cup Heavy Cream
- 2 Tablespoons Powdered Confectioners Sugar
- ½ Teaspoon Vanilla Extract
Directions
- FOR THE CRUST:
- Place 12 Oreo cookies into a food processor and chop until crumb consistency.
- Add 2 tablespoons of butter and pulsate until completely combined with the Oreo cookies.
- Take Oreo crust and press to the bottom of a small serving cup - set aside.
- FOR THE WHIPPED CREAM:
- In a stand mixture start beating the cream at a low speed.
- Slowly add the powdered sugar and increase speed.
- Add the vanilla extract and continue to beat until you get soft peaks.
- FOR THE FILLING
- In a small bowl, beat 3 egg yolks lightly and set aside.
- In a medium sauce pan add sugar, flour, salt and vanilla bean seeds - cook on medium for 1 minute.
- Slowly start whisking in milk until mixture thickens - continue to cook 2 minutes.
- Remove from heat and whisk a small amount into the egg yolks, make sure you keep whisking so the eggs do not cook.
- Pour egg mixture into main saucepan and cook on medium heat for 2 minutes.
- Remove from heat, add 2 tablespoons of butter and vanilla extract. Stir until butter completely melts.
- Allow to cool to room temperature.
- FOR THE ASSEMBLY:
- Once cooled, scoop an equal amount of pie filling on top of each Oreo cookie crusted pie cup.
- Scoop a small amount of whip cream atop each pie cup and sprinkle with chopped chocolate or Oreo Cookie crumbs.
